Mackerel with Potatoes is a delicious seafood dish where fish is the main ingredient.

For the marinade:

4 cloves of garlic (you can adjust the amount to taste)

¼ cup chopped fresh cilantro

½ teaspoon mustard powder

3 tablespoons mayonnaise

1 tablespoon vegetable oil
For the vegetables:

½ kg (about 1 lb) potatoes, cut into pieces (adjust quantity as desired)

1 onion, thinly sliced

2 carrots, cut into pieces

Hot chili or chili flakes to taste (optional)

Salt to taste

1 teaspoon black pepper

1 teaspoon turmeric

1 teaspoon curry powder

1 tomato, sliced

How to Make Mackerel with Potatoes:
First, place the garlic, salt, pepper, cumin, lemon juice, cilantro, mustard powder, mayonnaise, and oil in a blender. Blend until you get a smooth, well-combined marinade.
Next, make a slit on one side of each fish and coat the inside and outside thoroughly with the marinade. Set aside any remaining marinade.
Let the marinated fish sit for 30 minutes so it can absorb the flavors.
In a baking dish, arrange the sliced onions, carrots, and potatoes. Sprinkle with salt, pepper, turmeric, curry powder, and chili if using.
Place the marinated fish on top of the vegetables. Pour the remaining marinade over the fish. Garnish with tomato slices and drizzle some oil on top.
Place the baking dish in a preheated oven at 180°C (350°F). Pour half a cup of water into the dish, cover it with aluminum foil, and bake for 30 minutes.
After that, remove the foil and return the dish to the oven until the fish turns golden and crispy on top.
Finally, take it out of the oven, transfer to serving plates, and serve hot to your family so they can enjoy its unique and delicious taste.
