Mombar – Mombar Recipe – How to Cook Mombar – Cooking Tutorial
Also known as fawaregh or qubaawat in some Arab regions, Mombar is a traditional and much-loved dish across the Arab world. It is typically prepared on festive occasions and at large family gatherings.
This hearty delicacy is rich in flavor and nutritional value. A 300-gram serving provides approximately 501 calories, 14 grams of fat, 1 gram of saturated fat, 85 grams of carbohydrates, and 8 grams of protein.
Ingredients for Serving Five People
For the Mombar:

1 kilogram of raw mombar (cleaned cow or sheep intestines)

2½ tablespoons of white vinegar

2 cups of vegetable oil for frying

1 teaspoon of salt

4 cups of boiling water
For the Stuffing:

3 cups of Egyptian rice

Half a bunch of finely chopped parsley

Half a bunch of finely chopped coriander

Half a bunch of chopped dill

2 small onions, finely chopped

4 grated tomatoes

½ teaspoon of black pepper
-
½ teaspoon of mixed spices
-
¼ teaspoon of cumin
-
½ teaspoon of ground cinnamon

½ teaspoon of ground cardamom
-
½ teaspoon of salt
-
1 tablespoon of vegetable oil
-
4 bay leaves
-
¼ teaspoon of thyme
Cooking Instructions:
Start by preparing the mombar. Mix the mombar with salt and white vinegar in a large bowl. Stir thoroughly and let it sit for about three hours to ensure cleanliness and eliminate odors.
After that, wash the mombar thoroughly using flour and water. Cut it into medium-length pieces and set aside.
Now, prepare the stuffing. Heat the oil in a large pan, sauté the onions until soft, then add the grated tomatoes, rice, parsley, coriander, and dill. Stir well until everything is evenly combined.
Season the mixture with the spices: black pepper, mixed spices, thyme, cinnamon, salt, and cumin. Continue stirring and let the mixture cook on low heat for about fifteen minutes. Once done, your flavorful stuffing is ready.
Next, carefully stuff the mombar with the rice mixture using your fingers or a small spoon. Be careful not to overfill. Seal the ends tightly by tying or tucking to prevent the filling from spilling out during cooking. Repeat this process for all the pieces.
Place the stuffed mombar in a pot of boiling water. Add cardamom, black pepper, and bay leaves. Let it simmer on medium heat for around 20 minutes, until the mombar is fully cooked.
Finally, heat the vegetable oil in a frying pan. Fry the cooked mombar pieces until they turn golden brown and crispy. Drain on paper towels, arrange on a serving dish, and serve hot.
