Mushroom Risotto

 

  • 1½ cups Egyptian rice or Arborio rice

  • 3 cups chicken broth

  • 2 tablespoons vegetable oil

  • 1 onion, finely chopped

  • 2 garlic cloves, minced

  • 1 cup canned mushrooms

  • ¼ teaspoon salt

  • ¼ teaspoon black pepper

  • ¼ cup butter

For Garnish:

  • Grated Parmesan cheese (to taste)

  • A small amount of chopped parsley


How to Prepare Mushroom Risotto:

Start by washing the rice thoroughly and soaking it in water for about an hour. After soaking, drain the rice well.

In a deep pot, heat the chicken broth over low heat. If chicken broth is not available, you can substitute it by using 3 cups of water with one chicken bouillon cube.

In another pan, heat the vegetable oil and sauté the chopped onions until soft and translucent. Add the garlic and stir briefly, then add the mushrooms. Continue stirring until the mushrooms turn a light brown color.

Add the rice to the mushroom mixture, and gradually pour in the hot chicken broth a little at a time, allowing the rice to absorb the liquid before adding more. Continue this process until all the broth has been absorbed and the rice is fully cooked.

Next, stir in the salt, black pepper, and butter. Mix gently until the ingredients are well combined.

Transfer the risotto to a serving dish, sprinkle with grated Parmesan cheese and chopped parsley, and serve to your family to enjoy its rich, creamy taste and nutritious value.
