Tamriyeh is a beloved traditional dessert from Palestinian cuisine, known for its delicate texture, sweet flavor, and rich cultural roots. It is widely popular across Palestine and neighboring countries, often prepared during festive seasons, family gatherings, or as a comforting sweet treat.

Ingredients (Serves 6):

Palestinian Tamriyeh

 

For the Dough:

  • ¾ cup flour

  • ¼ cup water

  • ¼ teaspoon salt

For the Filling:

  • ½ cup semolina

  • ½ cup sugar

  • 2 cups water

  • 1 teaspoon orange blossom water

  • 5 crushed mastic beads (combined with 1 teaspoon sugar)

For Frying and Garnishing:

  • Vegetable oil (for frying)

  • ½ cup powdered sugar (for dusting)


Preparation Steps:

Step 1: Prepare the Dough
In a mixing bowl, combine flour, salt, and water. Mix well until a soft dough forms. Shape it into a ball.

Divide the dough into two equal portions, coat them with a little vegetable oil, and place them in the refrigerator for about 2 hours to rest.

Step 2: Make the Filling
While the dough rests, prepare the filling. In a deep saucepan, combine semolina, sugar, water, and crushed mastic. Stir the mixture over medium heat until it begins to thicken and bubble.

Once it reaches a pudding-like consistency, add the orange blossom water and stir briefly. Pour the mixture into a greased tray, spread it evenly, and let it cool and set.

Step 3: Assemble the Tamriyeh
Take one piece of dough from the fridge. Lightly oil your work surface and roll out the dough until it’s very thin.

Cut the thin sheet into four squares. Place a spoonful of the semolina filling in the center of each square, then fold over the edges like a pillow, sealing them tightly so the filling doesn’t leak during frying.

Repeat with the remaining dough and filling.

Step 4: Fry the Tamriyeh
In a deep frying pan, heat enough oil to submerge the pieces. Fry the filled dough parcels until golden and crispy on both sides, resembling small golden pillows.

Step 5: Serve
Drain the tamriyeh briefly on paper towels. Dust generously with powdered sugar, then serve warm to your family or guests.
