Rice-Stuffed Pigeon is a delicious and flavorful dish enjoyed around the world.

  • 5 pigeons

  • 1 cup flour

  • ½ cup lemon juice

  • 2 tablespoons vinegar

  • 3 cups Egyptian rice

  • ½ teaspoon black pepper

  • ½ teaspoon sweet spice blend

  • 1 onion, finely chopped

  • 1 teaspoon turmeric

  • Pinch of ginger

  • Pinch of cinnamon

  • ½ teaspoon white pepper

  • 2 tablespoons vegetable oil

For brushing the pigeons:

  • 1 tablespoon melted butter

  • 1 tablespoon oil

  • ½ tablespoon salt

  • 2 tablespoons lemon juice

For boiling the pigeons:

  • 1 onion

  • 1 tomato

  • Bay leaves, as desired

  • Cardamom pods, as desired

  • Salt, as desired

How to Make Rice-Stuffed Pigeon:

First, clean the pigeons thoroughly by rubbing them with flour, lemon juice, and vinegar, then set aside.

In a large pot, add water and rice and cook over low heat until the rice is partially cooked.

Add salt, black pepper, turmeric, chopped onion, ginger, cinnamon, white pepper, and vegetable oil to the rice. Stir well until everything is combined and the rice is fully cooked—this will be your stuffing.

Stuff each pigeon with the prepared rice and sew them closed with kitchen thread to keep the filling inside.

In a large pot, add water, whole onion, tomato, bay leaves, cardamom, and a pinch of salt. Place the stuffed pigeons in the pot and boil for about 1 hour, until they are cooked through.

Meanwhile, mix the melted butter, oil, salt, and lemon juice in a small bowl to make a basting mixture.

After boiling, brush the pigeons with the butter mixture and place them on a baking tray.

Roast the pigeons in a preheated oven at 180°C (350°F) until the skin is golden brown and crispy.

Finally, transfer the rice-stuffed pigeons to serving plates and serve hot to your guests so they can enjoy the rich and savory flavors of this traditional dish.
