2 whole eggs + 1 additional egg yolk
-
¼ cup sugar
-
8 tablespoons unsalted butter
-
½ teaspoon salt
-
1 tablespoon sugar (extra)
-
3 cups all-purpose flour
-
1 tablespoon heavy cream
-
¾ cup milk
-
2¼ teaspoons instant yeast
Filling:
-
½ cup sugar
-
4 tablespoons butter
-
¼ teaspoon salt
-
1¼ cups chocolate chips
-
1½ teaspoons ground cinnamon
Crunchy Topping:
-
¼ cup sugar
-
¼ cup all-purpose flour
-
3 tablespoons butter
-
2 tablespoons powdered sugar
How to Make Russian Chocolate Cake:
Step 1 – Prepare the Dough:
In a small bowl, mix yeast, one tablespoon of sugar, and warm milk. Stir until dissolved and bubbly. In another bowl, whisk together one egg, one egg yolk, and ¼ cup sugar. Once well combined, add the yeast mixture. Gradually stir in the flour, followed by the softened butter. Mix everything together until you get a soft dough. Place the dough in a plastic bag or bowl covered with a towel and let it rest for one hour in a warm place.
Step 2 – Make the Filling:
While the dough rests, prepare the chocolate filling. In a saucepan or bowl, combine the chocolate chips, sugar, cinnamon, salt, and butter. Stir until the mixture becomes smooth and well blended. Set aside.
Step 3 – Assemble the Cake:
Roll the rested dough out on a floured surface into a rectangle. Spread half of the chocolate filling evenly over the surface. Beat the remaining egg and brush the edges of the dough with it. Roll the dough tightly into a log, like a jelly roll.
Place the rolled dough into a greased rectangular loaf pan. Brush the surface with the beaten egg and heavy cream mixture.
Step 4 – Prepare the Crunchy Topping:
In a separate bowl, mix together sugar, powdered sugar, flour, and butter until crumbly. Sprinkle the mixture over the top of the rolled dough along with the remaining half of the chocolate filling. Cover the pan loosely with parchment paper and let it rise in a warm place for another 30 minutes.
Step 5 – Bake:
Preheat the oven to 175°C (350°F). Bake the cake for approximately one hour, or until the top is golden and a toothpick inserted in the center comes out clean. Let the cake cool completely before slicing.
This cake is more than just dessert—it’s a celebration of warmth, tradition, and family. Whether served with hot tea on a snowy evening or sliced up for a festive morning, Russian chocolate cake brings joy, comfort, and a rich burst of flavor to every table.
