1.5 kilograms of guinea fowl or turkey, cut into 8 pieces
-
4 tablespoons of oil
-
5 onions, finely chopped
-
5 ripe tomatoes, blended
-
4 tablespoons of tomato paste
-
1 teaspoon of salt
-
½ teaspoon of cumin
-
2 tablespoons of chopped fresh coriander
-
1 teaspoon of crushed garlic
-
2 teaspoons of mixed spices
-
1 teaspoon of hot red pepper (chili powder)
Cooking Instructions:
Begin by heating the oil in a large pot over medium heat. Add the chopped onions and sauté them until they soften and begin to caramelize.
Next, pour a little water into the pot, then add the mixed spices and chili powder. Stir the mixture until the flavors are well blended.
Add the guinea fowl pieces (or turkey) to the pot, stirring thoroughly so that the meat is well coated with the spice mix.
Then add the tomato paste, blended tomatoes, garlic, chopped coriander, cumin, and salt. Stir all ingredients together until well combined.
Allow the mixture to cook over medium heat for about 45 minutes, or until the poultry is fully cooked and tender.
