Stuffed Cabbage Rolls – Mahshi Malfouf Recipe – How to Prepare Stuffed Cabbage

Stuffed cabbage, or Mahshi Malfouf, is a globally cherished dish found in various forms across many cultures. It’s especially popular at family feasts, festive gatherings, and traditional banquets throughout the Middle East and Eastern Europe.

Ingredients (Serves 4):

Stuffed Cabbage Rolls

 

For the Filling:

  • 2 teaspoons oregano

  • 2 finely chopped onions

  • 500 grams minced lamb

  • 1½ cups rice

  • 1 whole cabbage, leaves boiled and softened

  • A pinch of black pepper

  • Salt to taste

  • A pinch of mixed spices

For the Sauce:

  • 1½ cups crushed tomatoes

  • 2 tablespoons tomato paste

  • 1 onion, finely chopped

  • A pinch of black pepper

  • Salt to taste


Cooking Instructions:

Step 1: Prepare the Filling
In a large bowl, mix the chopped onions, minced meat, and rice until well combined. Add the oregano, salt, black pepper, and mixed spices. Stir thoroughly until all ingredients are evenly incorporated.

Step 2: Prepare the Cabbage
Separate the softened cabbage leaves. On a clean surface, lay each leaf flat, place a spoonful of the filling in the center, and roll it tightly like a cigar. Repeat this process with the remaining leaves and filling.

Step 3: Cook the Rolls
Place the stuffed rolls neatly in a deep pot. Pour in enough water to cover them. To keep the rolls in place while cooking, place a heat-safe plate on top as a weight. Cover the pot and cook over high heat for about an hour, or until the cabbage is tender and the rice is fully cooked.

Step 4: Prepare the Sauce
In a saucepan, heat a little oil and sauté the chopped onion until soft. Add the crushed tomatoes and tomato paste, season with salt and pepper, and stir until the mixture thickens and reaches a boil.

Step 5: Serve
Once the cabbage rolls are fully cooked, transfer them to serving plates, pour the tomato sauce over the top, and serve warm. This comforting dish is sure to be a hit with the whole family, delivering warmth, flavor, and nutrition in every bite.
