-
1 tablespoon dried oregano
-
1 tablespoon dried basil
-
2 tablespoons olive oil
-
1 medium onion, finely chopped
-
2 cloves garlic, minced
-
6 medium mushrooms, sliced
-
1 bunch spinach, chopped
-
½ cup chopped parsley
-
1 medium egg
-
¼ cup flour
-
2 tablespoons butter
How to Prepare Stuffed Chicken Fillet:
Preheat your oven to 180°C (356°F). Prepare a shallow oven-safe dish and set it aside.
Place the chicken fillets between two sheets of parchment paper and gently pound them with a meat mallet until they’re slightly flattened.
In a small bowl, mix the salt, pepper, mixed spices, coriander, oregano, and basil. Sprinkle a bit of this seasoning mix over both sides of the chicken pieces and leave them aside.
In a wide skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion becomes soft. Add the mushrooms and cook until they soften, then stir in the spinach and cook until any moisture evaporates. Mix in the parsley, remaining spices, and a splash of lemon juice, then cook for a few more minutes until the mixture slightly dries out.
Lay out the chicken fillets and place a spoonful of the stuffing on one end of each piece. Roll the fillets tightly around the stuffing and secure them with wooden toothpicks.
Crack the egg into a wide bowl and place the flour in another. Dip each stuffed fillet into the egg, ensuring it’s coated evenly, then dredge it in the flour until well covered.
In a clean skillet, melt the butter over medium heat. Brown the stuffed chicken on all sides until golden.
Transfer the fillets along with any juices into the prepared oven dish. Bake for 20 minutes until the chicken is fully cooked and has a nice golden color.
Once ready, transfer to a serving plate and enjoy it with a side of sautéed vegetables or your favorite accompaniment.
Bon appétit!
