Stuffed Roast Turkey with Freekeh – How to Cook Freekeh-Stuffed Turkey
Stuffed roast turkey with freekeh is a delicious and hearty dish often reserved for grand occasions, feasts, and large family gatherings. It’s a rich and filling meal that provides the body with substantial energy and protein.
Because of the time and effort involved in preparing it, this dish is typically made for special events. Its irresistible aroma, golden skin, and flavorful stuffing make it the star of any banquet table.
Ingredients (Serves 10)
For the Turkey:

1 whole turkey (approximately 2 kilograms)

4 tablespoons coarse salt

1 cup lemon juice

1 teaspoon fine salt

1 teaspoon black pepper

1 teaspoon mixed spices

1 teaspoon paprika

½ cup toasted almonds

½ cup toasted pistachios

½ cup raisins

Melted butter (as desired)
For the Freekeh Stuffing:

1½ cups freekeh, soaked in water for 30 minutes

1 onion, finely chopped
-
2 tablespoons vegetable oil
-
1 cup water
-
3 garlic cloves
-
1 teaspoon mixed spices
-
½ teaspoon ground cardamom
-
2 bay leaves
-
Salt and black pepper to taste
Cooking Instructions:
Start by rubbing the turkey with coarse salt and lemon juice. Massage thoroughly, then rinse, clean out the cavity, and remove the liver.
In a separate bowl, mix the fine salt, black pepper, paprika, and mixed spices. Use this spice blend to season the turkey both inside and out.
Now prepare the freekeh stuffing. In a large pot, heat the oil and sauté the onions and garlic. Add the turkey liver, browning it lightly. Season with salt, black pepper, mixed spices, cardamom, and bay leaves.
In another pot, heat the water, then add the sautéed liver mixture. Bring it to a boil, then stir in the soaked freekeh. Mix well, cover the pot, and reduce the heat once it starts to boil. Let it simmer gently until the freekeh is fully cooked.
Once the freekeh is ready, stuff the turkey with half the quantity and seal the cavity. Rub the surface of the bird with melted butter, place it in a roasting tray, cover it with aluminum foil, and roast it in a preheated oven at 180°C (356°F) for about 2 hours until fully cooked.
Remove the foil, then place the turkey under the broiler briefly to achieve a golden, crispy skin.
To serve, place the remaining freekeh on a large serving platter, nestle the roasted turkey in the center, and garnish the dish with toasted almonds and pistachios along the edges. Serve it hot and let your family enjoy the indulgent flavors of this festive meal.
