Taman Tahshin – Taman Tahshin Recipe – How to Make Taman Tahshin

Taman Tahshin is a flavorful dish from traditional Iraqi cuisine, known for its rich and hearty meals.

This dish is one of the most popular in Iraq, often prepared for gatherings and special feasts.

It is packed with health benefits, providing the body with proteins and vitamins, as well as a good amount of calories for energy.

Ingredients for Taman Tahshin (serves four):

For the rice:

  • 2 cups washed rice

  • 1¼ cups water

  • Salt to taste

  • 1 tablespoon vegetable oil

  • ½ teaspoon saffron soaked in ½ cup water

For the filling:

  • 300 grams lamb, cut into small pieces

  • 1 large potato, cubed and fried

  • 1 onion, finely chopped

  • 2 tablespoons vegetable oil or melted butter, as preferred

Spices:

  • ½ teaspoon ground dried lime (loomi)

  • ½ teaspoon ground cardamom

  • ½ teaspoon turmeric

How to Make Taman Tahshin:

First, prepare the rice by placing it in a pot with the measured water and vegetable oil. Cover with a lid wrapped in a kitchen towel, and cook over medium heat until the rice is done. Once cooked, remove from heat and set aside.

Meanwhile, fry the potato cubes in oil until golden and cooked through; set aside.

For the filling, heat oil in a large pot, add the chopped onion, and sauté until softened. Add the lamb pieces and cook, stirring, until they start to brown. Add the turmeric, cardamom, and fried potatoes, stirring briefly to combine, then remove from heat. The filling is now ready.

In a separate large pot, drizzle a little oil and start layering: first a layer of cooked rice, then a layer of the lamb and potato filling, followed by another layer of rice, another layer of filling, and finally a top layer of rice.

In the top rice layer, make small wells and pour in the saffron infusion along with small pieces of butter.

Cover the pot and place it over high heat for 5 minutes, then reduce to low heat and cook for 15 minutes.

Finally, remove the pot from heat, carefully invert it onto a serving platter, and serve hot so your family can enjoy its delicious, hearty flavor.
