Tandoori Chicken – Recipe & Cooking Instructions
Tandoori chicken is one of the most iconic and flavorful dishes in Indian cuisine. It’s known for its juicy, spiced flavor and its vibrant red color that makes it irresistibly appetizing. Traditionally cooked in a clay tandoor oven, it can also be roasted in a conventional oven, grilled over charcoal, or even wrapped in foil and cooked underground—each method adding a unique smoky depth. It’s served as a main dish and often accompanied by rice or flatbread at special gatherings.

Ingredients:

4 pieces of chicken (legs or thighs, bone-in preferred)

½ cup tangy plain yogurt

2 tbsp tomato paste

1 tbsp crushed red chili flakes

1 green chili pepper

1 cup chopped parsley

1 tbsp dried coriander
-
5 cloves of garlic

1 medium onion

1 tsp salt

1 heaping tsp garam masala

1 tsp mixed spices (all-spice or curry blend)

1 tbsp olive oil

1 tsp dried thyme

1 tsp white vinegar

1 tsp lemon juice
How to Prepare Tandoori Chicken:

Prepare the Marinade:
In a large mixing bowl, combine the chopped onion, garlic, parsley, green chili, salt, black pepper, mixed spices, garam masala, thyme, vinegar, lemon juice, yogurt, tomato paste, coriander, and chili flakes. Mix thoroughly until you get a thick, fragrant marinade.

Marinate the Chicken:
Coat the chicken pieces well with the marinade, ensuring the spices get under the skin where possible. Cover and refrigerate for at least 2 hours—preferably overnight—for deeper flavor infusion.

Cook the Chicken:
Preheat the oven to 200°C (392°F). Arrange the marinated chicken pieces in a baking tray. Spoon some of the remaining marinade over the top for a more vibrant color and rich flavor.
Roast the chicken for about 1 hour, turning the pieces occasionally to ensure even cooking and caramelization on all sides.

Remove from the oven once the chicken is fully cooked and has developed a beautiful red crust.
Serve hot on a platter, accompanied by steamed basmati rice, yogurt sauce, or grilled vegetables marinated in the same spice mix for a complete and satisfying meal.
