5 cups fresh spinach

300 grams cooked mushrooms

Cooking Instructions:
Step 1: Sauté the Vegetables
In a deep pot, sauté the mushrooms, onion, carrots, celery, garlic, and Italian seasoning over medium heat. Stir continuously until fragrant and slightly softened.
Step 2: Add Water and Simmer
Add enough water to cover the vegetables. Cover the pot and let it simmer until the mixture begins to boil.
Step 3: Add the Dairy and Pasta
Add the evaporated milk, tortellini, and the cornstarch dissolved in a little water. Stir well, cover again, and allow to cook on medium heat for about 45 minutes until the tortellini is tender and the sauce thickens.
Step 4: Add the Spinach
Once the pasta is nearly done, add the spinach and cook for an additional 10 minutes, just until wilted and incorporated into the sauce.
Step 5: Final Touch
Pour in the milk, add salt (and pepper to taste if desired), and stir until the sauce reaches your preferred consistency.
Step 6: Serve
