  • 1 kg chicken breasts or thighs, as preferred

  • 3 onions

  • 2 zucchinis

  • 1 carrot

  • 2 cardamom pods

  • ½ cup canned beans

  • 1 cup green beans (or black-eyed peas)

  • 1 tomato

  • 1 sweet bell pepper

  • 1 tablespoon vegetable oil

  • Salt to taste

  • Black pepper to taste

How to Make Vegetable Tori with Chicken:

First, prepare the marinade by blending the onions, cardamom, salt, and black pepper in a blender until smooth.

Rub the chicken thoroughly with the marinade, making sure to get it under the skin and into the meat.

Place the marinated chicken in a baking dish, cover with aluminum foil, and refrigerate for at least two hours or longer—the longer it marinates, the more flavorful it becomes.

Meanwhile, prepare the sauce by blending the onions, tomato, salt, and pepper until smooth. Set aside.

Slice the zucchini and carrot into rounds, and cut the bell pepper into cubes.

Remove the chicken from the refrigerator and place it in the baking dish. Add the canned beans and green beans around the chicken. Pour the prepared sauce over everything, leaving the chicken exposed so it can be brushed with vegetable oil. Once brushed, sprinkle black pepper over the chicken.

Bake in a preheated oven at 180°C (350°F) for about 1½ hours, until the chicken and vegetables are fully cooked.
