Vietnamese Spring Rolls are a staple of Southeast Asian cuisine, particularly in Vietnam, where they are served fresh, light, and full of crisp vegetables. Ingredients (Serves 2):

Vietnamese Spring Rolls

 

For the Filling:

  • 2 carrots, thinly sliced

  • 1 zucchini, thinly sliced

  • 2 red bell peppers, thinly sliced

  • 1 red onion, thinly sliced

For the Pickling Sauce:

  • 1 teaspoon sweet Japanese soy sauce

  • 1 teaspoon rice vinegar

  • 1 teaspoon oyster sauce

  • 1 teaspoon fish sauce

  • 1 piece peeled ginger

  • 3 garlic cloves

  • 1 red chili, halved

For Assembly and Garnish:

  • 1 package of rice paper wrappers

  • 1 teaspoon chopped fresh coriander

  • 1 teaspoon crushed peanuts

  • 1 green onion stalk

  • 1 red bell pepper, sliced for garnish


How to Make Vietnamese Spring Rolls:

Step 1: Prepare the Pickling Sauce

In a medium saucepan over low heat, combine sweet soy sauce, rice vinegar, oyster sauce, and fish sauce. Stir the mixture until it begins to combine and simmer.

Add the chili pepper, ginger, and garlic to the pot. Stir well. Then, add the prepared vegetables (carrots, zucchini, red bell pepper, and red onion) and let them soak in the sauce for about 15 minutes off the heat.

After marinating, return the pot to low heat and simmer until the sauce thickens slightly. Remove from heat and refrigerate the mixture to cool.


Step 2: Assemble the Rolls

Fill a shallow bowl or skillet with warm water. Briefly submerge one rice paper sheet for a few seconds until it becomes soft and pliable.

Lay the softened rice paper on a flat surface. Place a spoonful of the pickled vegetables in the center, along with 3 coriander leaves and a small amount of crushed peanuts.

Fold the sides over the filling, then roll tightly from the bottom to form a neat spring roll. Repeat the process for the remaining ingredients.

Group the rolls into a round bundle for presentation, and cover with a damp cloth to keep them fresh until serving time.


Step 3: Garnish and Serve

When ready to serve, prepare a quick garnish by mixing sliced red bell pepper, green onion, and chopped coriander.

Arrange the spring rolls on a plate with the garnish mix on the side. Serve chilled or at room temperature with dipping sauce of your choice—like peanut sauce or hoisin.
