Yemeni Salta is a hearty, rich dish from the unique Yemeni cuisine, known for providing a substantial amount of energy.
This dish is considered the national dish of Yemen, and from there it spread to the Gulf countries, becoming one of the most popular traditional meals in the Arabian Gulf region.

Ingredients for Yemeni Salta (serves four):

600 grams lamb, cut into cubes

5 cups water

1 tablespoon oil

3 garlic cloves

1 onion, finely chopped

1 teaspoon salt

½ teaspoon turmeric

½ teaspoon ground coriander
-
½ teaspoon cumin
For the fenugreek sauce (hilbeh):

2 teaspoons fenugreek seeds
-
½ bunch chives or green onions
-
1 garlic clove
-
¼ teaspoon whole cumin seeds
-
2 green or mild chilies (use hot or mild according to preference)

Water as needed
-
½ teaspoon salt
How to Make Yemeni Salta:
First, prepare the fenugreek sauce by soaking the fenugreek seeds in half a cup of water for one hour.
In a blender, combine the chives, garlic, cumin seeds, and green chilies. Blend until you get a smooth, uniform mixture.
Drain the soaked fenugreek, then add it to the blender with the other ingredients. Blend again until the mixture becomes creamy.
Next, in a pressure cooker, heat the oil over medium heat. Add the garlic, onion, cumin, turmeric, coriander, and salt. Stir until fragrant.
Add the lamb cubes and sauté until the meat is browned on all sides.
Pour in the water, close the pressure cooker, and cook for 30 minutes until the meat is tender and the flavors are well combined.
Finally, pour the hot lamb stew into serving bowls, top each with a generous spoonful of the creamy fenugreek sauce, and serve immediately to your family and friends so they can savor its unforgettable taste.
