  • 6 zucchinis, washed and dried

  • Olive oil (for brushing the zucchinis)

  • ½ cup tomato paste

For the filling:

  • 500g chicken breast, finely chopped

  • ¼ cup tomato paste

  • 4 cloves garlic, minced

  • 1 finely chopped onion

  • ½ teaspoon mixed spices

  • 1 teaspoon garlic powder

  • 1 teaspoon chicken curry powder

  • Salt and pepper to taste

  • ¼ cup olive oil

  • Shredded mozzarella cheese (for topping)


How to Make Zucchini Boats with Chicken:

Start by heating olive oil in a skillet. Add the chopped onion and minced garlic and sauté until the onion becomes soft and fragrant.

Meanwhile, slice the zucchinis in half lengthwise and scoop out the center flesh with a spoon, creating a "boat" shape. Brush the insides and outsides of the zucchinis with olive oil.

Lightly oil a baking tray and arrange the zucchini halves cut side up.

Now, prepare the chicken filling. In a deep pan, combine all the filling ingredients and cook over medium heat until the chicken is fully cooked and the mixture is well combined.

Spoon the chicken mixture generously into each zucchini boat. Pour tomato paste around the zucchinis in the tray for added flavor and moisture.
