Almond Cake Without Wheat Flour – Recipe & Cooking Instructions

This almond cake is easy to prepare and perfect for times when you're out of wheat flour. Almonds, one of the most popular and widely loved nuts, are known not only for their rich taste but also for their numerous health benefits. They're excellent for heart and brain health, rich in Vitamin E, dietary fiber, and essential minerals that strengthen bones. They’re also celebrated for their beauty-enhancing properties.

Ingredients

Almond Cake Without Wheat Flour

 

  • 1¾ cups of finely ground almonds (almond flour)

  • 3 medium eggs, separated (whites and yolks)

  • ¾ cup granulated sugar

  • ¼ cup sifted cornstarch

  • ½ teaspoon ground cinnamon

  • ½ cup freshly squeezed orange juice

  • 1 teaspoon orange zest

  • 1 tablespoon unsalted butter

For Garnish (Optional):

  • 5 tablespoons apricot jam (optional)

  • 1 cup toasted almond slices

  • 1 tablespoon shredded coconut (optional)


How to Make Almond Cake Without Wheat Flour

Preheat your oven to 180°C (350°F).

Grease a cake pan with a little butter, dust it with cornstarch, and shake out the excess.

In a mixing bowl, beat the egg whites with half the sugar using an electric mixer until stiff peaks form.

In a separate bowl, beat the egg yolks with the remaining sugar until thick and pale.

Add the sifted cornstarch, cinnamon, orange juice, and orange zest to the yolk mixture, and continue mixing.

Gradually fold in the almond flour while mixing gently until the batter is well combined.

Carefully fold the beaten egg whites into the batter in stages, using a spatula, being cautious not to deflate the mixture.

Pour the batter into the prepared cake pan and place it into the preheated oven. Bake for about 45 minutes, or until a toothpick inserted into the center comes out clean. Avoid opening the oven during baking to prevent the cake from collapsing.

Once baked, remove the cake from the oven and turn it out onto a wire rack to cool completely.


Optional Decoration:

Before adding almonds, you can brush the top of the cake with apricot jam and sprinkle with shredded coconut for added flavor and shine.

Finish by topping the cake with toasted almond slices for a delightful crunch.

This cake pairs beautifully with a cup of fresh juice or your favorite coffee.
