Apricot Jam Sablé – Recipe – Cooking Instructions

Apricot Jam Sablé is a type of dessert widely popular across the Arab world, with many different preparation methods.

Sablé is a delicate, crumbly biscuit often served on special occasions, available in many flavors such as chocolate sablé, vanilla sablé, and more.

The recipe has its origins in France, where it was first created before spreading internationally.

Servings: This recipe makes enough for about 8 to 10 people.

Ingredients:

Apricot Jam Sablé

 

  • 7 cups all-purpose flour

  • 2 cups granulated sugar

  • 2 cups soft (not chilled) butter

  • 3 eggs

  • 1 tablespoon vanilla extract

  • 1 tablespoon lemon zest

  • 3 teaspoons baking powder

  • ½ cup apricot jam

  • ½ cup powdered sugar (for dusting)

Preparation Method:

  1. In an electric mixer, whisk the eggs with the vanilla and lemon zest until well combined. Add the sugar and soft butter, and continue mixing until the sugar dissolves completely.

  2. Add the baking powder, then gradually add the flour while mixing until a smooth, cohesive dough forms.

  3. Wrap the dough in a clean cloth and let it rest in the refrigerator for about 30 minutes. Remove it from the fridge and roll it out on a clean, lightly floured surface to prevent sticking. (Alternatively, you can place a sheet of plastic wrap under and over the dough, then roll it out with a rolling pin to ensure it doesn’t stick.)

  4. Roll the dough into a large circular sheet, then cut it into small round shapes using a small cup or special sablé cookie cutters.

  5. Divide the rounds into two equal groups. For the first group, use a sharp knife to cut out small circles in the center of each cookie.

  6. Arrange the cut-out cookies on a baking tray, then bake them in a preheated oven at 180°C (356°F) until they turn a light golden color.

  7. Remove from the oven and allow them to cool completely before transferring from the tray.

  8. Bake the second group of whole cookies in the same way, then let them cool completely.

  9. To assemble: Sprinkle powdered sugar over the center-cut cookies and set aside. Spread equal amounts of apricot jam onto the whole cookies, then place the sugar-dusted cookies on top so the jam shows through the center.

  10. Arrange the sablé cookies on a serving plate and enjoy them with a cup of coffee or tea.
