Barazek – Recipe
Barazek is a traditional Syrian sweet and one of the most famous Arabic desserts. It is known for its crisp texture and delicious flavor, and it is often enjoyed alongside a cup of coffee or Nescafé.
This recipe makes enough for 15 or more people.

Ingredients:

1 cup sugar

1 large egg

1 tbsp vanilla

3 cups flour

1 tsp salt

1 tbsp baking powder

1 cup liquid milk
-
3 tbsp crushed pistachios
-
1 egg white
-
1 cup butter (Lurpak or any available type)

3 tbsp sesame seeds
Preparation Method:

Beat the butter and sugar with an electric mixer on medium speed until creamy. Lower the speed, add the vanilla and egg, and continue mixing until fully incorporated.

In a separate bowl, mix the flour, baking powder, and salt. Gradually add this dry mixture to the butter mixture, followed by the milk, and beat until a smooth dough forms.

Let the dough rest for 5 minutes. Roll it out on a floured surface and cut into equal-sized circles using a cookie cutter.

Place small portions (about ¼ tsp) of crushed pistachios spaced apart on a baking sheet. Place each dough circle over the pistachios and press lightly so the pistachios stick to the bottom.

Whisk the egg white until frothy, brush it on top of each cookie, and sprinkle with sesame seeds.

Preheat the oven to 180°C (350°F). Place the tray on the middle rack and bake for about 15 minutes, or until lightly golden (be careful not to burn the bottoms).

Remove from the oven, let cool, and arrange on a serving platter.
Note: Use unsalted pistachios and raw (not roasted) sesame seeds for the best result.
