Beef Shawarma – Beef Shawarma Recipe – How to Make Beef Shawarma
Beef Shawarma is one of the most popular and delicious dishes enjoyed around the world.
This meal has its origins in Turkey, and it spread to the Levant during the Ottoman era, eventually becoming a beloved street food across the region.
Preparing Beef Shawarma at home is both flavorful and much healthier than many store-bought options.
Beef Marinade

4 large cloves of garlic, crushed

¼ cup olive oil

⅓ cup white vinegar (apple cider vinegar can also be used; it helps the meat tenderize faster)

1 tablespoon meat spices (shawarma or mixed spice blend)

1 tablespoon ground dry coriander
-
¼ teaspoon black pepper
-
½ teaspoon turmeric
-
1 teaspoon ground cinnamon
-
1 tablespoon salt
-
1 medium tomato, chopped
-
½ large green bell pepper, sliced into strips
Tahini Sauce (to spread on bread before filling)

1 cup tahini
-
¾ cup water
-
¼ cup lemon juice
-
2 tablespoons white vinegar
-
1 teaspoon salt
-
½ teaspoon ground cumin
For Serving

1 large onion
-
½ cup white vinegar
-
3 tablespoons sumac
-
1 cup chopped parsley
-
Arabic pita bread or saj bread
-
Assorted pickles
How to Cook Beef Shawarma

Slice the beef into thin long strips and set aside.

Prepare the marinade: In a large glass bowl, combine garlic, olive oil, vinegar, meat spices, coriander, black pepper, turmeric, cinnamon, and salt. Mix well.

Add the beef strips and coat thoroughly with the marinade. Cover and refrigerate for several hours, preferably overnight, for best flavor.

Heat a medium skillet. Place the beef (without adding the leftover marinade at first) and cook over high heat until the meat is almost dry. Then add the marinade mixture, along with 1 cup of water. Lower the heat, cover, and let it simmer until the beef is fully cooked. Finally, turn the heat back up and cook until the liquid evaporates completely.

Add the chopped tomato and bell pepper strips, stir over high heat for a few minutes until the peppers soften slightly. Remove from heat and keep warm.
Preparing the Tahini Sauce
Mix all the tahini sauce ingredients in a bowl. Whisk with a fork or hand whisk until smooth and creamy. If too thick, add more water. Set aside.
Preparing the Onion
Peel and slice the onion thinly. Soak the slices in white vinegar for about 10 minutes, then drain before adding them to the sandwiches.
Assembling the Shawarma Sandwiches

Open the bread and spread a thin layer of tahini sauce.

Add beef shawarma, a few slices of marinated onion, sprinkle with sumac and parsley.

Roll the sandwich tightly and grill it on a sandwich press or electric grill for about 2 minutes until lightly toasted.
