Beehive Bread – Recipe

Beehive bread is a soft, fluffy, and beautifully arranged pastry loved by the whole family. Its golden, shiny appearance and pull-apart texture make it as appealing to look at as it is to eat. Preparing it requires a bit of skill and attention to detail, so following the ingredients and method closely is key to achieving the perfect taste and shape.

You can make it with various fillings, such as different types of cheese, za’atar, or chocolate, depending on preference.

This recipe serves 5 people.


Ingredients

Beehive Bread

 

For the dough:

  • 4 cups flour

  • 4 tablespoons sugar

  • A pinch of salt

  • 1 cup yogurt

  • ½ cup vegetable oil

  • 1 medium egg

  • 1 teaspoon vanilla

  • 3 tablespoons powdered milk

  • 2 teaspoons yeast

  • 1 teaspoon baking powder

  • 2 tablespoons cornstarch

  • 1¼ cups warm water

For the filling:

  • Cheese of choice (Kiri, triangle cheese, or fresh cheese). Drain well and dust lightly with cornstarch to absorb moisture and prevent sogginess.

  • Chocolate (firm chocolate cubes or chocolate spread).

For the glaze:

  • 1 tablespoon powdered milk

  • 1 tablespoon vegetable oil

  • 1 tablespoon sugar

  • 1 tablespoon water


Preparation

  1. Place the fillings in the fridge until ready to use.

  2. Mix the dry ingredients (sugar, powdered milk, yeast, and salt) together. Add warm water and stir until combined.

  3. Add the yogurt and cornstarch, then mix with an electric mixer on medium speed until smooth.

  4. Add the vanilla and egg, and beat again until well incorporated.

  5. Add the oil and mix with a whisk or fork. Gradually add the flour while mixing (by hand, mixer, or stand mixer). Add the baking powder with the flour until a smooth, cohesive dough forms. Knead for at least 5 minutes with your fingertips.

  6. Place the dough in a bowl, cover, and let rise until doubled in size (about 2 hours).

  7. Divide the dough into small balls. Lightly grease a baking tray with oil.

  8. Flatten each ball, place the filling inside, seal well, and roll back into a ball. Dust lightly with flour and arrange in the tray, leaving small gaps between balls.

  9. Preheat the oven to 200°C (392°F), then reduce to 180°C (356°F). Bake for about 40 minutes on medium heat.

  10. Before browning the top, prepare the glaze by mixing water, powdered milk, oil, and sugar, and brush it over the bread. Continue baking until golden.

  11. Prepare sugar syrup (2 cups sugar to 1 cup water with a squeeze of lemon). Pour over the bread while warm. Let cool slightly and serve warm.
