Ingredients:
-
1 cup chopped peanuts
-
4 cups corn flour
-
1 cup milk
-
1 cup powdered sugar
-
4 medium eggs
-
1 cup ghee (clarified butter)
-
1 cup black honey (molasses)
-
2 cups dates, chopped into small pieces
Preparation Method:
-
In a large mixing bowl, combine the sugar and ghee. Beat with an electric mixer until the mixture turns pale and fluffy. Add the eggs gradually, mixing well after each addition until fully blended.
-
In another bowl, sift together the corn flour, baking powder, and a pinch of salt. Gradually add this dry mixture into the sugar and ghee mixture, stirring well.
-
Add the milk and molasses, mixing gently in one circular direction (avoid over-mixing).
-
Fold in the chopped dates and peanuts, ensuring they are evenly distributed and not clumped together in the batter.
-
Preheat the oven to 180°C (350°F). Grease a baking tray with ghee and lightly dust with flour. Pour the batter into the tray and bake until fully cooked (check doneness with a toothpick; it should come out clean).
-
Once baked, remove from the oven and sprinkle powdered sugar over the top. Garnish with dried fruits or drizzle with caramel sauce, if desired.
Serve warm or at room temperature, ideally with a glass of fresh milk.
