Cauliflower with Tahini – Recipe and Cooking Method
Cauliflower with tahini is a delicious and nutritious dish that is very popular across the Arab world, especially in the Levant and Egypt.
This meal is simple to prepare and provides plenty of energy thanks to its rich nutritional value. Every 100 grams contains about 25 calories, 5 grams of carbohydrates, 3 grams of dietary fiber, and 2 grams of protein.

Ingredients for Cauliflower with Tahini:

1 kg cauliflower

500 g minced meat

1 cup tahini

1 teaspoon salt

1 teaspoon white pepper

1 teaspoon cumin

Mixed spices (to taste)

Juice of 1 lemon

1 onion, finely chopped

1 cup fresh coriander leaves

3 garlic cloves
-
1 chicken stock cube

Oil for frying
Preparation Method:

Separate the cauliflower florets, wash thoroughly, remove the stem, and soak them in salted water for 5 minutes to clean.

Heat oil in a pot and fry the cauliflower until golden brown.

Prepare the tahini sauce by mixing tahini with salt, white pepper, lemon juice, and ¼ cup water. Stir until smooth.

In another pot, heat some oil, add onion and garlic, then stir in the minced meat. Season with salt, white pepper, and mixed spices, and cook well.

Add the fried cauliflower to the cooked meat, pour over the tahini sauce, and add the chicken stock cube. Let the mixture simmer for about 10 minutes.

Meanwhile, prepare the coriander sauce by frying garlic and chopped coriander in a little oil for about 2 minutes.

Transfer the cauliflower with tahini to serving dishes, garnish with the coriander mixture, and serve hot for a flavorful, wholesome meal.
