Chicken cannelloni is a classic Italian dish, known for its delicious flavor and versatility. The filling can be customized with various ingredients and prepared in multiple ways to suit different tastes.
Servings: 4 to 5 people.
Ingredients:
-
5 cups plain yogurt
-
2 cups flour
-
2 teaspoons soft butter
-
1 cup cheese
-
1 kg boiled chicken
-
2 large eggs
-
1 tablespoon salt
-
1 tablespoon white pepper
-
1 teaspoon black pepper
-
1 teaspoon paprika
-
1 teaspoon ground coriander
Preparation:
-
In a large mixing bowl, combine 1½ cups flour, 1½ cups yogurt, and the eggs. Whisk until smooth and well blended to form a batter.
-
Melt 1 teaspoon of butter in a pan over medium heat. Pour in just enough batter to cover the base of the pan, cooking for about 2 minutes until the bottom is lightly browned. Flip and cook the other side until golden.
-
Repeat this process with the remaining batter to make all the cannelloni sheets. Set them aside on a large flat plate.
-
To prepare the béchamel sauce, melt the remaining 1 teaspoon butter in a large pan over medium heat. Add 1 cup flour and stir until smooth. Gradually add 4 cups yogurt, along with 1 teaspoon salt, the pepper varieties, and coriander. Stir until the mixture comes to a boil and thickens.
-
Mix the chopped chicken with 1 cup of the béchamel sauce and ½ cup cheese.
-
Lay out each cannelloni sheet and fill with the chicken-and-cheese mixture. Roll each sheet tightly and place them in a baking dish.
-
Pour the remaining béchamel sauce over the rolled cannelloni, then sprinkle the remaining ½ cup cheese on top.
-
Bake in a preheated oven at 180°C (356°F) for 30 minutes, or until the top is golden brown.
-
Remove from the oven and serve hot.
Bon appétit!
