Chicken Quesadilla – Recipe
Chicken quesadilla is a traditional Mexican dish, loved for its delicious taste and beautiful presentation.
It is quick and easy to prepare, making it perfect for family gatherings and parties. You can either make the tortilla bread at home or buy it ready-made from the store.
This recipe serves 6 people.
Ingredients for the tortilla dough:

2 cups all-purpose flour

¼ tsp salt

3 tbsp vegetable oil, olive oil, butter, or ghee (as available)

1 tsp baking powder
-
½ to ¾ cup warm water
Ingredients for the filling:

2 chicken breasts, cut into cubes

2 medium onions
-
1 green bell pepper
-
1 red bell pepper
-
200 g grated cheddar cheese
-
200 g grated mozzarella cheese
-
¼ tsp black pepper
-
¼ tsp ground coriander
-
½ tsp salt
Preparing the tortilla dough:

In a bowl, mix flour, salt, and baking powder. Add the oil and rub into the flour until the mixture resembles crumbs.

Gradually add water and knead until the dough becomes soft and elastic.

Cover and let rest for 30–60 minutes.

Divide the dough into small balls. Roll each one out with a rolling pin into a thin, round shape.

Heat a large skillet. Cook each tortilla until bubbles form on the surface, then flip briefly to heat the other side without browning too much (to keep it soft).

Place the cooked tortillas in a slightly damp cloth to keep them moist and pliable.
Preparing the chicken filling:

Heat oil in a large skillet. Chop the onions and sauté until slightly soft.

Add the chicken cubes, along with diced red and green bell peppers. Stir-fry together.

Season with salt, black pepper, and coriander. Cook until the chicken is fully cooked through.
Assembling the quesadillas:

Place a tortilla on a flat surface. Sprinkle cheddar and mozzarella evenly on it.

Spread the chicken and vegetable mixture over the cheese, then add more cheese on top. Cover with another tortilla.

Heat a grill or skillet, and cook the stuffed tortilla until the cheese melts and the bread is lightly golden.

Repeat until all the filling is used.
Cut into wedges, garnish with tomato slices and parsley, and serve hot.
