Chocolate Panna Cotta Cups

 

For the panna cotta:

  • A pinch of lavender flowers for garnish

  • 1 cup cream

  • Zest of 1 lemon

  • 1 teaspoon gelatin, soaked in 4 tablespoons cold water

  • ½ cup sugar

  • 1 cup milk

For the chocolate sauce:

  • 1 cup cream

  • 100 g chocolate


Method

  1. Prepare the panna cotta: In a saucepan, heat the milk with the lavender flowers until it begins to boil. Remove from heat, let steep for 5 minutes, then strain out the flowers.

  2. Return the milk to the heat, add the sugar, and stir until dissolved.

  3. Gently heat the soaked gelatin until melted (without boiling). Add a small amount of the hot milk to the gelatin, mix well, then combine with the remaining milk.

  4. Add the lemon zest and 1 cup of cream, stirring until smooth.

  5. Pour the mixture into serving cups and refrigerate overnight until set.

  6. Prepare the chocolate sauce: Heat the cream in a small pot, then add the chocolate, stirring until melted and smooth.

  7. Serve the panna cotta cups garnished with lavender flowers, accompanied by the rich chocolate sauce.
