Coconut Cake – Traditional Omani Dessert

Coconut cake is originally Omani in origin, and it is considered one of the most delicious desserts thanks to its rich flavor and irresistible aroma. Beyond taste, it also comes with many benefits and is often enjoyed as a light treat alongside a cup of coffee or a glass of fresh milk.

This recipe makes about 12 servings.

Ingredients for the Cake:

Coconut Cake

 

  • 2 cups flour

  • ¼ teaspoon salt

  • 2 teaspoons baking powder

  • ¼ teaspoon baking soda

  • 1 cup finely grated coconut

  • 1 cup sugar

  • ½ cup butter

  • 2 eggs

  • 1 teaspoon vanilla extract

  • 2 tablespoons powdered milk

  • 1 cup liquid milk

Ingredients for Decoration:

  • 1 can sweetened condensed milk

  • Grated coconut

Preparation Method:

  1. Preheat the oven to 180°C (350°F) and place the rack in the center. Grease small cupcake molds with butter or ghee, dust lightly with flour, and set aside.

  2. In a large bowl, sift together flour, salt, baking powder, and baking soda. Add the grated coconut and stir well.

  3. In a stand mixer, beat the sugar and butter with the whisk attachment on medium speed until the mixture becomes fluffy and light in color. Add the eggs and vanilla, beating until the eggs are completely blended.

  4. In a separate measuring cup, combine the powdered milk with the liquid milk until dissolved.

  5. Add half the milk mixture and half the flour mixture to the butter-sugar mixture. Beat for about a minute. Then add the remaining milk and flour and continue mixing until smooth.

  6. Transfer the batter into a piping bag and fill two-thirds of each cupcake mold.

  7. Bake in the oven for 10–15 minutes, or until the cakes turn golden brown. Remove from the oven, place on a wire rack, and let cool completely.

  8. For decoration, pour the condensed milk into a bowl and spread the grated coconut on a flat plate. Dip the top of each cooled cake first into the condensed milk, then into the grated coconut until fully coated.

  9. Serve with coffee, tea, or a warm cup of cappuccino—and enjoy the delightful taste!
