Date Cake – Healthy and Delicious Dessert
Date cake is one of the healthiest desserts, as its main ingredients are chopped dates and milk, which provide the body with energy and essential minerals. Dates also increase iron levels and strengthen the immune system.
This cake is perfect for special occasions and gatherings because it is both easy to prepare and rich in flavor. The preparation time takes about 40–50 minutes.
Ingredients:

1 cup vegetable shortening (or ghee)

1 ½ cups sugar

4 eggs
-
1 cup milk
-
1 ½ cups chopped walnuts
-
1 cup finely chopped dates
-
½ teaspoon ground cinnamon
-
½ teaspoon ground nutmeg
-
½ teaspoon baking soda
-
3 cups flour
-
Pinch of salt
-
4 teaspoons baking powder
Preparation Method:

Lightly toast the chopped walnuts in a pan.

Sift together the flour, cinnamon, nutmeg, baking soda, and baking powder. Mix well and set aside.

In a deep bowl, beat the shortening until smooth. Add the sugar and continue beating in the same direction until the mixture becomes light and creamy. Add the egg yolks one at a time, beating until fully combined.

Add a little milk and beat well, then gradually add half of the flour mixture and half of the milk, mixing until smooth.

In another bowl, whisk the egg whites with a pinch of salt until stiff peaks form. Gently fold them into the main mixture, stirring in the same direction until well blended.

Gradually add the remaining flour and milk, mixing until smooth.

Fold in the toasted walnuts, then add the chopped dates (lightly coated with flour to prevent sticking) and mix gently.

Grease a baking pan with butter or shortening and dust lightly with flour. Pour in the batter and shake the pan gently to level the surface.

Preheat the oven to 180°C (350°F) for 10 minutes. Place the pan on the middle rack and bake without opening the oven for about 45 minutes.

Check for doneness by inserting a knife into the cake—if it comes out clean, the cake is ready.

Remove from the oven and decorate with cream, nuts, or as desired.
