Ghraybeh – Recipe – How to Make Ghraybeh

Ghraybeh is a beloved and well-known dessert across the Arab world. It is famous for its delicate, melt-in-the-mouth texture. Despite being quick and easy to prepare with ingredients available in almost every home, it requires precision and care. Ghraybeh doesn’t use liquids, and it should remain soft when eaten.

Servings: 5 to 7 people.

Ingredients:

Ghraybeh

 

  • 1 cup soft butter

  • 1 cup powdered sugar

  • 1 large egg white

  • 2 cups flour

  • A pinch of salt (about ¼ teaspoon)

  • 1 cup crushed pistachios

  • Whole pistachios or cashews for garnish

Preparation:

  1. Preheat the oven to 180°C (356°F) and place the oven rack in the center. Prepare shallow baking trays.

  2. In a mixer bowl, add the butter and powdered sugar. Using the paddle attachment, beat on medium speed for about 5 minutes, or until the butter becomes very pale yellow.

  3. Add the egg white and beat again on medium speed until fully incorporated.

  4. Gradually add the flour and salt, mixing on medium speed for 1 to 2 minutes until a soft, smooth dough forms. Let the dough rest for at least 1 hour.

  5. Place the crushed pistachios in a deep plate. Take a small portion of dough about the size of a walnut (or slightly smaller) and gently shape it into a smooth ball.

  6. Press a whole pistachio (or cashew) lightly into the center of each ball. Arrange the shaped cookies on the baking tray, and sprinkle with crushed pistachios.

  7. Bake for 8 to 10 minutes, ensuring the ghraybeh remains an ivory-white color.

  8. Remove from the oven and allow to cool slightly before arranging on a serving plate. Serve alongside coffee or fresh juice.
