Iraqi Badhinjaneya – Eggplant Salad/Appetizer

Badhinjaneya is a delicious and traditional Iraqi dish, part of the rich and diverse Iraqi cuisine, which is known for its unique and nourishing recipes.

Ingredients (Serves 4):

Iraqi Badhinjaneya

 

  • 2 eggplants

  • 1 green bell pepper

  • 1 onion

  • 1 teaspoon ground cumin

  • ½ cup ketchup

  • ½ cup pomegranate molasses

  • 2 cucumbers

  • 2 tablespoons lemon juice

  • 2 tablespoons olive oil

  • Salt, to taste

  • Vegetable oil, for frying


Method:

  1. Heat vegetable oil in a deep pot. Wash and cut the eggplants into even cubes, then fry until golden brown. Remove and place on paper towels to drain excess oil.

  2. Slice the onion and sauté it lightly in the same pot until softened. Remove and place on paper towels as well.

  3. Chop the green pepper, cucumbers, and tomatoes, then place them in a large mixing bowl. Add the fried onion slices and toss together.

  4. Add the cumin, lemon juice, olive oil, pomegranate molasses, and salt. Mix well until all ingredients are combined.

  5. Cover the bowl with plastic wrap and refrigerate for about 15 minutes to chill.

  6. Serve as a side dish with the main meal, and enjoy its tangy, refreshing, and savory flavor.
