Kuwaiti Daqoos – Recipe & Cooking Method

Kuwaiti daqoos is a traditional appetizer that holds a special place in Kuwaiti cuisine and across the Gulf region. It is most famously served as the classic side dish with Kuwait’s national dish, machboos (spiced rice with meat or chicken).

This tomato-based sauce is known for its bold flavor and its nutritional value. It is rich in calories, vitamins, proteins, and fiber, making it both satisfying and energizing. Tomatoes provide a good dose of vitamin C and antioxidants, helping protect the body against various types of cancer.

Thanks to its fiber content, daqoos also promotes healthy digestion, prevents constipation, and strengthens the immune system, helping the body resist illnesses and infections. With vinegar and onions among its key ingredients, it’s also considered weight-friendly, as they both aid in burning fat. In addition, its iron content makes it beneficial for people suffering from anemia.

Ingredients (Serves 4–6):

Kuwaiti Daqoos

 

  • 3 tomatoes, peeled and finely chopped

  • 2 tablespoons vegetable oil

  • 2 garlic cloves

  • 2 tablespoons vinegar

  • 1 chili pepper (mild or hot, as desired)

  • 1 tablespoon tomato paste

  • ½ teaspoon salt

  • ½ teaspoon black pepper

  • 1 teaspoon chili powder (optional, to taste)

  • 1 onion, finely chopped


Preparation Method:

  1. Place the chopped tomatoes in a blender and blend until smooth.

  2. Heat the vegetable oil in a deep saucepan, add the onion and garlic, and sauté until softened.

  3. Stir in the vinegar and bring to a gentle boil. Add the chili pepper, tomato paste, salt, black pepper, and chili powder, mixing well.

  4. Pour in the blended tomato juice, stirring continuously until the sauce thickens to a rich consistency.

  5. Remove from the heat, transfer to serving bowls, and serve warm as a flavorful side to machboos or any main dish.
