Lebanese Sayadiyah (Fish with Rice)

Lebanese Sayadiyah is one of the most traditional and beloved dishes of Lebanese cuisine. It is a seafood-based meal where fish is the star ingredient, often prepared in coastal households and enjoyed during family gatherings.

From Lebanon, Sayadiyah spread to other coastal cities along the Mediterranean, especially in Syria and Palestine.

This dish is highly nutritious, as fish is rich in proteins and essential minerals such as calcium, phosphorus, sodium, and copper. It also contains important vitamins and fibers that support digestion, prevent constipation, and maintain intestinal health. Thanks to its calcium content, it strengthens bones and teeth, helping to prevent osteoporosis. In addition, Sayadiyah boosts immunity, protects against diseases and blood clots, and provides the body with balanced nourishment.

Ingredients:

Lebanese Sayadiyah (Fish with Rice)

 

  • 1 kg fish (preferably large-sized)

  • 4 cups rice

  • 3 onions, sliced

  • 1 teaspoon cumin

  • 1 teaspoon saffron

  • 1 cup vegetable oil

  • 50 g butter

  • 2 tablespoons flour


Preparation Method:

  1. Clean the fish thoroughly, season with cumin, salt, and saffron, then dust lightly with flour. Fry in vegetable oil for about 5 minutes until golden.

  2. In a separate pot, heat some oil and fry the sliced onions until soft. Add the fried fish, cover with water, and bring to a boil.

  3. Once the fish is fully cooked, remove it from the pot and let it cool while preparing the rice.

  4. In another pot, add a little oil and the rice. Pour over the fish broth until the rice is fully covered. Bring to a boil, then reduce the heat to low, cover, and let it cook until tender.

  5. When the rice is done, transfer it to a large serving dish. Debone the fish, flake it into pieces, and arrange them decoratively on top of the rice.

  6. For the sauce: melt the butter in a small pot, add the flour, and stir until combined. Gradually add the remaining fish broth, stirring constantly until the mixture thickens.

  7. Serve the Sayadiyah hot, accompanied by the sauce on the side, and enjoy the authentic taste of this Lebanese classic.
