Loubia with Olive Oil – Recipe and Cooking Method

Loubia bil Zeit (green beans with olive oil) is a traditional dish popular in many Arab countries, especially in the Levant. It is considered a heritage dish and is much loved for both its taste and its health benefits.

This dish derives its nutritional value from loubia (green beans), which are packed with vitamins such as B, A, and C. They also contain essential minerals including iron, potassium, calcium, magnesium, phosphorus, copper, zinc, and folic acid.

The health benefits of loubia are many: it eases digestion, prevents constipation, and supports heart health. It is highly recommended for people with heart problems or diabetes. Ingredients:

Loubia with Olive Oil

 

  • 1 kg green beans (loubia)

  • 3 onions, thinly sliced

  • 7 garlic cloves

  • ½ cup olive oil

  • 1.5 kg tomatoes, peeled and chopped

  • 2 tablespoons salt

  • A pinch of mixed spices


Preparation Method:

  1. Trim the ends of the beans, wash thoroughly, and drain.

  2. In a large pot, heat olive oil and sauté the onions and garlic over high heat until golden.

  3. Add the beans, salt, and spices, and stir several times over the heat.

  4. Add the chopped tomatoes, stir well, then cover the pot. Once it reaches a boil, reduce the heat to low and let it simmer until the beans are tender.

  5. Transfer to serving dishes and let cool. Traditionally, this dish is served cold, making it refreshing and flavorful.
