Ma’arouk with Raisins – Traditional Damascene Ramadan Bread
Ma’arouk with raisins, often called the Damascene Ramadan bread, is a historic and cultural pastry whose origins trace back to Damascus more than a hundred years ago.
The primary reason behind its creation was to provide the poor with a filling meal rich in essential nutrients that would help them endure the hardships of fasting during the holy month of Ramadan.
According to one story, the bread was given to the poor and needy as a substitute for regular bread throughout Ramadan. Another explanation says its name comes from the intense kneading (“ʿark” in Arabic) done by the women of Damascus when preparing the dough.
This bread is considered a wholesome meal, as it contains wheat, sugar, milk, eggs, ghee, and raisins—ingredients that supply the body with proteins, energy, and easily absorbed sugars. However, it is quite high in calories, so it should be eaten in moderation. Traditionally, it has also been believed to stimulate blood circulation and even help break down kidney stones.
Ingredients (Serves 4):

3 ½ cups flour

1 cup water

¼ cup oil

1 cup sugar

1 tablespoon butter

1 tablespoon instant yeast

4 tablespoons powdered milk

1 teaspoon baking powder

1 teaspoon fine salt

1 cup raisins
-
1 egg
Preparation Method:
First, sift the flour and mix it with baking powder and powdered milk.
In a separate deep bowl, combine water, oil, sugar, and yeast, mixing well until the sugar is fully dissolved.
Once blended, add the butter and stir thoroughly. Then gradually add in the flour mixture, kneading until you get a soft, smooth dough.
Next, incorporate the raisins into the dough and knead until evenly distributed.
Divide the dough into small balls, let them rest for a while, then roll each piece into a spiral shape. Beat the egg and brush it over the top of the dough pieces.
Arrange the bread on a greased baking tray to prevent sticking and bake in a medium-hot oven for about 20 minutes, until the tops turn golden brown.
Remove from the oven, let them cool slightly, and serve to your family to enjoy their delicious flavor.
