Malban Cake – Recipe
Malban cake is a popular Middle Eastern dessert, especially in the Gulf region. It is a soft and flavorful cake with a delicious chewy filling of malban (a type of fruit jelly candy), often combined with nuts for added richness.
It’s a nutritious treat thanks to its filling, which includes walnuts—one of the richest sources of omega-3 fatty acids.
This recipe serves 4–5 people.
Ingredients

1 cup sugar

2 medium eggs

¾ cup oil

¾ cup liquid milk

2 cups flour

¾ teaspoon baking soda

½ cup malban
-
2 tablespoons crushed walnuts

1 tablespoon raisins
-
1 teaspoon orange zest
Preparation

Preheat the oven to 180°C (356°F).

Prepare a round bundt cake pan by greasing it lightly with oil, then dusting it with flour. Shake off the excess flour.

In a mixing bowl, beat the eggs with an electric mixer at medium speed. Add the sugar and continue beating until the mixture becomes creamy.

Gradually add the oil, followed by the milk, while continuing to beat.

In a small bowl, mix the baking soda with the crushed walnuts.

Lightly flour a clean surface, then press and flatten the malban with a rolling pin or your hands until it softens and becomes easy to arrange.

Gradually fold the flour into the egg mixture using a wooden spoon, stirring gently until well combined.

Pour half the cake batter into the prepared pan. Arrange the malban pieces evenly on top.

Pour the remaining batter over the filling to completely cover it.

Bake in the preheated oven for about 1 hour, or until a toothpick inserted into the cake comes out clean.

Remove from the oven, allow to cool slightly, then turn out onto a wire rack to cool completely.

Slice and serve with a cup of fresh juice or coffee.
