Okra and Meat Casserole, known in Arabic as Tagen Bamya bil Lahma, is a beloved dish across Egypt and the Middle East. Though okra is believed to have originated in Ethiopia, South Asia, and Southern Africa, it has become a staple in kitchens around the world—cooked in sauces, grilled, fried, or added to soups.

Ingredients

Okra and Meat Casserole

 

For the Meat Base:

  • 2 tbsp vegetable oil

  • 1 kg beef (cut into rough chunks)

  • 6 garlic cloves, sliced

  • 2 green chili peppers, chopped

  • 1 tbsp mixed spices (e.g., allspice or 7-spice blend)

  • 1 tsp salt (or to taste)

  • ½ tsp ground cinnamon

  • ½ tsp black pepper


For the Okra Mixture:

  • 3 tbsp ghee or clarified butter

  • 1 kg okra (fresh or frozen, trimmed)

  • 4 garlic cloves, minced

  • 3 hot chili peppers, sliced

  • ½ cup chopped parsley

  • 3 medium tomatoes, chopped


For the Tomato Sauce:

  • 2 tbsp lemon juice

  • 3 tbsp tomato paste

  • 1 cup water

  • 1 tsp black pepper

  • 1 tsp crushed chili flakes


How to Make Okra and Meat Casserole

Step 1: Cook the Meat
In a large skillet, heat the vegetable oil over low heat. Add the beef chunks and sauté until they begin to brown.

Add the onion, garlic, green chili, and spices (salt, cinnamon, black pepper, and mixed spices). Stir everything well and continue to cook until the onion turns golden and fragrant.


Step 2: Prepare the Okra Mixture
In another skillet, heat the ghee over medium heat. Add the okra and sauté for at least 3 minutes.

Add the garlic, hot peppers, and tomatoes, and stir until the tomatoes soften and the onions begin to wilt.

Spread the okra mixture over the cooked meat in a large baking dish (or clay tagine if available). Sprinkle with the parsley and mix gently.


Step 3: Make the Sauce
In a small bowl, whisk together:

  • Lemon juice

  • Tomato paste

  • Water

  • Black pepper

  • Crushed chili flakes

Pour the sauce evenly over the okra and meat in the dish.


Step 4: Bake the Casserole
Cover the baking dish tightly with aluminum foil and place it in a preheated oven at 180°C (350°F).

Bake for 1 hour until the meat is tender and the okra is fully cooked and infused with flavor.


Step 5: Serve and Enjoy
Remove from the oven, uncover, and serve hot—straight from the baking dish or transferred to a serving platter.
