Qalaat Stones Tart – Recipe

“Qalaat Stones Tart” is a traditional Syrian dessert that has also become popular across the Levant and Turkey. It is known for being simple and quick to prepare, with a delightful flavor and an irresistible aroma.

This tart is often served at birthdays and special occasions. What makes it unique is the flexibility of its filling — you can choose any jam you prefer, from apricot to apple, cherry, or strawberry.

This recipe serves 8 to 10 people.

Ingredients:

  • 3 cups all-purpose flour

  • 3 large eggs

  • ½ cup fine sugar

  • ½ tsp salt

  • 1 tsp vanilla

  • 1 tsp baking powder

  • 2–3 cubes butter (room temperature, as needed)

  • Apricot jam (or any jam of your choice: apple, cherry, strawberry, etc.)


Preparation Method:

  1. In a deep mixing bowl, combine flour, sugar, baking powder, and vanilla. Mix well. Add the eggs and butter, blending until the dough becomes creamy.

  2. Take ¼ of the dough, wrap it in plastic, and refrigerate for 15 minutes until firm enough to grate. Spread the remaining dough evenly in a greased baking pan.

  3. Spread the jam evenly over the dough layer.

  4. Remove the reserved dough from the fridge, grate it over the jam layer, and optionally sprinkle almonds, cashews, or other nuts on top.

  5. Bake in a preheated oven at 175°C (350°F) until the surface turns a golden-brown color. Remove, let cool completely, then cut into neat squares or bars.

Serve with a glass of fresh juice or a cup of coffee, and enjoy its delicious flavor.
