Qassimi Masabeeb – Traditional Saudi Pancakes

Masabeeb Qassimiya are a type of traditional dessert popular across the Arabian Peninsula, particularly in Saudi Arabia.

This heritage sweet dates back to ancient times, first prepared by the people of Najd, from where it spread throughout Saudi Arabia and beyond.

What makes this dessert special is its simplicity—it’s quick to prepare, requires only basic ingredients that are always available in markets, and is often made by homemakers for family gatherings and special occasions.

Nutritionally, Masabeeb is considered a wholesome dish. Thanks to the use of whole wheat flour, it provides dietary fiber that slows the absorption of sugar, cholesterol, and fats. Fiber also helps digestion and keeps the stomach healthy. Additionally, this dish contains valuable minerals such as iron, phosphorus, and calcium, which help prevent arteriosclerosis and osteoporosis, while also supporting overall vitality and even reproductive health.


Ingredients (Serves 4):

Qassimi Masabeeb

 

  • 1 cup whole wheat flour

  • 1 cup white flour

  • 6 tablespoons powdered milk

  • 2 eggs

  • A pinch of vanilla

  • 4 tablespoons sugar

  • 2 tablespoons yeast

  • 1 teaspoon baking powder

  • A pinch of salt

  • 3 cups warm water

  • 3 tablespoons vegetable oil

  • Powdered sugar or black seeds (nigella) for garnish


Method:

  1. In a blender, combine the eggs, sugar, and vanilla. Blend until the sugar dissolves completely.

  2. Add the powdered milk, baking powder, and salt. Blend again until fully combined.

  3. In a separate bowl, mix the yeast with warm water and a pinch of sugar. Let it rest until it foams and activates.

  4. Add the whole wheat flour and white flour into the blender mixture. Blend until a smooth, runny batter forms.

  5. Stir in the yeast mixture and let the batter rest for about 10 minutes.

  6. Lightly oil a frying pan and heat it. Pour a small amount of batter into the pan in a circular shape.

  7. Wait until bubbles appear on the surface, then flip to cook the other side until golden brown. Repeat with the remaining batter.

  8. Garnish by sprinkling powdered sugar or nigella seeds on top.

Serve warm to family and guests for a taste of authentic Saudi tradition.
