Raspberry Jam Biscuits – Recipe
Raspberry jam biscuits are a delicious, easy-to-make treat with a beautiful appearance. They are also considered a healthier dessert option, packed with beneficial ingredients.

This recipe serves 6 to 8 people.
Ingredients:

2 tsp liquid vanilla

2 cups ground walnuts

1 ½ cups rolled oats

3 cups rice flour
-
½ cup soy milk
-
½ cup raspberry jam
-
½ cup canola oil
-
¾ cup maple syrup
-
½ cup natural honey
-
1 tbsp ground cinnamon

A pinch of salt
Preparation Method:
To make walnut flour:

Place about 3 ½ cups roasted walnuts in a food processor and blend on high speed until finely ground.
To prepare the dough:
2. Add the rice flour, oats, cinnamon, and salt to the walnut flour in the food processor. Blend until the mixture forms a coarse meal.
3. In a large mixing bowl, whisk together honey, maple syrup, canola oil, soy milk, and vanilla until smooth.
4. Gradually add the dry mixture into the wet mixture, stirring gently until a soft dough forms. If the dough feels too dry, add a little water.
5. Cover the dough with a clean kitchen towel and let it rest for 15 minutes.
Shaping and baking:
6. Preheat the oven to medium heat (about 180°C / 350°F). Line baking trays with parchment paper.
7. Roll the dough into small balls, about 5 cm in size, and place them on the trays. Press your finger into the center of each ball to create a small indentation.
8. Fill each indentation with about 1 tsp (or more) of raspberry jam.
9. Bake for 20 minutes, or until the tops are firm and golden.
Serving:
10. Remove from the oven and let the biscuits rest on the trays for 5 minutes. Then transfer to a cooling rack until completely cooled. Arrange on a serving platter and enjoy.
