Sheikh Al-Mahshi, also known as zucchini in yogurt sauce, is one of the most delicious dishes of Syrian cuisine. The Syrian kitchen has long been known for its creativity and the wide variety of recipes that have been passed down through generations.

This dish is typically served at lunch, as it is hearty, nutritious, and flavorful, with its benefits coming mainly from zucchini and yogurt.

Ingredients

Sheikh Al-Mahshi

 

  • 2 kg medium-sized zucchini (suitable for hollowing and stuffing)

  • 400 g minced meat (finely ground)

  • 40 g pine nuts

  • 2 kg yogurt

  • 2 eggs

  • 6 tablespoons cornstarch

  • Salt (to taste)

  • Black pepper (to taste)

  • 1 onion, chopped


Preparation

  1. Prepare the zucchini: Wash the zucchini well. Lightly peel off a thin layer of the skin to remove dirt, then carefully hollow them out without breaking the shells.

  2. Make the stuffing: Heat frying oil in a pot. Add the onion and sauté until golden. Stir in the minced meat, then add pine nuts, salt, and black pepper. Cook until the meat is done—this will be your stuffing.

  3. Stuff and seal: Fill each zucchini with the meat mixture. Seal the open ends with grape leaves or small pieces of zucchini to prevent the filling from spilling out.

  4. Fry the zucchini: Heat oil in a deep pan and fry the stuffed zucchini until golden.

  5. Parboil the zucchini: Transfer the fried zucchini into a pot of boiling water. Let them simmer briefly, then remove.

  6. Prepare the yogurt sauce: In a separate bowl, whisk together yogurt, eggs, and cornstarch until smooth. Place over heat, stirring constantly until the mixture begins to boil.

  7. Combine: Add the stuffed zucchini to the boiling yogurt sauce. Let simmer for about 10 minutes until the zucchini is fully tender and infused with flavor.

  8. Serve: Transfer to serving dishes, garnish with toasted pine nuts, and serve warm for the family to enjoy.
