Spinach with Ground Meat – Recipe
Spinach with ground meat is a healthy and light dish, often served as a side alongside vermicelli rice. It’s packed with iron – an essential mineral – as well as important vitamins, magnesium, fiber, calcium, and protein. Best of all, it’s simple and doesn’t take much time to prepare.
Ingredients:

2 kg fresh spinach, cleaned and roughly chopped

500 g finely ground beef

2 medium onions, finely chopped (or 3 medium garlic cloves, minced)

2 tbsp pine nuts
-
4 cups water
-
1 tbsp lemon juice
-
½ cup vegetable oil
-
¼ tsp black pepper
-
¼ tsp ground sumac
-
¼ tsp ground coriander
-
2 tsp salt
Preparation Method:

Heat the vegetable oil in a deep pot over high heat. Add the onions (or garlic) and sauté until golden.

Add the pine nuts, then the ground beef. Cook until browned. Season with salt, black pepper, sumac, and coriander. Stir well to combine.

In a separate pot, add the spinach with the water. Cook over medium heat for about 10 minutes until the spinach wilts. Drain well in a colander, pressing with a spoon to remove excess water.

Add the drained spinach to the meat and onion mixture. Cook over low heat for another 10 minutes. Add the lemon juice and stir everything together gently with a wooden spoon.

Transfer to a serving dish, garnish with lemon slices, toasted pine nuts, and a few pomegranate seeds if available. Serve hot with vermicelli rice.
Note:
You may replace the onions with minced garlic if preferred. For a different variation, you can skip draining and pressing the spinach and serve it as a hearty soup alongside vermicelli rice, using the same method above.
