Syrian Namoura – Traditional Semolina Cake
Namoura is a beloved traditional dessert from the Levant region, especially popular in Syria. It is often prepared for joyful occasions such as weddings, graduations, and family celebrations.
What makes Namoura special is how simple and affordable it is to prepare. Its ingredients are available year-round, and the recipe requires little effort, which is why it has become a household favorite across generations.
This dessert is rich in energy and calories, making it a popular choice during the cold winter months. However, because of its high calorie content, it is best consumed in moderation by those who are watching their weight.
Namoura also carries nutritional benefits thanks to its main ingredient, semolina. Ingredients (Serves 7):
For the Cake:

1 kg fine semolina

1 cup sugar

1 cup milk

1 cup corn oil

½ teaspoon mastic powder

4 teaspoons baking powder

3 teaspoons orange blossom water

1 tablespoon tahini
-
Almonds and shredded coconut for garnish
For the Syrup (Qater/Attar):

3 cups sugar
-
1½ cups water
-
3 teaspoons orange blossom water

3 teaspoons rose water

1 tablespoon lemon juice
Method:

Prepare the Syrup:
Place the water and sugar in a pot over medium heat. Once the sugar dissolves, add the rose water, orange blossom water, and lemon juice. Let the mixture boil for about 10 minutes, then remove from heat and set aside to cool completely. -
Prepare the Namoura Batter:
In a large bowl, combine the sugar, semolina, oil, milk, mastic, baking powder, orange blossom water, rose water, and tahini. Mix thoroughly until you form a smooth batter. -
Resting the Batter:
Grease a baking tray lightly with tahini or flour. Pour in the batter and let it rest for about 1½ hours. -
Baking:
Preheat the oven to 180°C (350°F). Bake the Namoura for about 25 minutes, then remove from the oven. Cut into diamond or square shapes, garnish with almonds, and return to the oven for another 15 minutes until golden brown. -
Finishing Touches:
Remove from the oven and immediately pour the cooled syrup evenly over the hot Namoura. Sprinkle with shredded coconut for extra flavor. -
Serving:
Allow it to cool slightly, then arrange the pieces on serving plates and present to guests.
