Turkish Delight (Malban) – Recipe – How to Make Malban
Malban, also known as Turkish Delight, is a light and chewy confection traditionally made from sugar and starch, with various natural flavorings such as fruit, flower essence, or sometimes nuts. It is known for its soft texture and quick melt-in-the-mouth quality.
Servings: 4 to 6 people.
Note: This recipe is high in calories, so it’s best enjoyed in moderation.
Ingredients:

2½ cups cornstarch

5 cups powdered sugar

1 teaspoon fresh lemon juice

1 teaspoon cream of tartar powder

5 cups water
-
250 g roasted pistachios
-
3 tablespoons rose water
-
Vegetable oil for greasing the tray

Powdered sugar mixed with an equal amount of cornstarch (for coating)
Preparation Method:

In a large, deep pot over low heat, combine half the water with the lemon juice and sugar. Let the mixture come to a boil until it forms a soft ball stage.

In another pan, mix the cornstarch, cream of tartar, and the remaining water. Place over heat and stir constantly until it begins to boil, preventing lumps from forming.

Continue cooking for another 10 minutes, then gradually pour in the prepared sugar syrup (for every 2 cups of sugar, use 1 cup water and a squeeze of lemon). Stir well to combine.

Reduce the heat to very low and simmer for about 2 hours, stirring occasionally.

Test the texture by dropping a small spoonful into cold water; it should be elastic and soft.

Mix the pistachios with rose water in a bowl, then stir them into the malban mixture until well combined.

Pour the mixture into a large, well-oiled tray. Spread evenly and leave it to set for 24 hours.

The next day, turn the malban out onto a sheet of baking paper and cut into desired shapes using a knife coated with powdered sugar and cornstarch.

Coat all sides of the pieces with the powdered sugar–cornstarch mixture.

Serve in a dish, garnished with crushed pistachios or shredded coconut if desired. You can also sandwich a small piece of malban between two plain biscuits for a different serving idea.
