Ingredients

Turkish Lentil Köfte

 

  • 1 cup red lentils

  • 3 cups water

  • ½ cup fine bulgur (cracked wheat)

  • 2 onions, finely chopped

  • 2 tbsp tomato paste

  • 1 tsp red pepper paste (optional but traditional)

  • ¼ cup fresh parsley, finely chopped

  • ¼ cup green onion tops, chopped

  • ¼ tsp ground coriander

  • ½ cup olive oil

  • Juice of 1 large lemon

  • 1 tsp ground cumin

  • Salt to taste

  • Lettuce leaves (for serving)


How to Make Turkish Lentil Köfte

Step 1: Cook the Lentils

  • Wash the lentils thoroughly and drain.

  • Place the lentils in a deep pot with 3 cups of warm water.

  • Bring to a boil and simmer until the lentils are fully soft and starting to break apart.

  • Before the water completely evaporates, add the bulgur, cover the pot, and let it sit for 10–15 minutes to absorb the remaining liquid.


Step 2: Sauté the Flavor Base

  • In a nonstick pan, heat the olive oil over medium-low heat.

  • Add the chopped onions and sauté until they begin to soften.

  • Stir in the tomato paste and red pepper paste (if using), and cook until the mixture is well blended and the onions become translucent.


Step 3: Combine and Mix

  • In the same pan, briefly sauté the green onion tops, coriander, and cumin for about 1 minute to release their aroma.

  • Add this mixture to the lentil and bulgur base.

  • Add salt, lemon juice, and the chopped parsley.

  • Mix everything thoroughly until fully combined and the texture is soft and pliable.


Step 4: Shape and Serve

  • Wet your hands lightly and shape the mixture into oval or finger-shaped patties.

  • Line a serving platter with fresh lettuce leaves and place the lentil köfte on top.

  • Serve with a side of fresh vegetable salad, pickles, or your favorite dipping sauce like tahini or yogurt (if not vegan).
