½ cup fine bulgur (cracked wheat)

2 tbsp tomato paste

1 tsp red pepper paste (optional but traditional)

¼ cup green onion tops, chopped

¼ tsp ground coriander

½ cup olive oil

Juice of 1 large lemon

1 tsp ground cumin

How to Make Turkish Lentil Köfte
Step 1: Cook the Lentils

Wash the lentils thoroughly and drain.

Place the lentils in a deep pot with 3 cups of warm water.

Bring to a boil and simmer until the lentils are fully soft and starting to break apart.

Before the water completely evaporates, add the bulgur, cover the pot, and let it sit for 10–15 minutes to absorb the remaining liquid.
Step 2: Sauté the Flavor Base

In a nonstick pan, heat the olive oil over medium-low heat.

Add the chopped onions and sauté until they begin to soften.

Stir in the tomato paste and red pepper paste (if using), and cook until the mixture is well blended and the onions become translucent.
Step 3: Combine and Mix

In the same pan, briefly sauté the green onion tops, coriander, and cumin for about 1 minute to release their aroma.

Add this mixture to the lentil and bulgur base.

Add salt, lemon juice, and the chopped parsley.
