Vanilla & Chocolate Banana Muffins

This recipe serves about 8–10 people, making it perfect for gatherings with friends. Each muffin contains around 278 calories, making it a satisfying treat to enjoy alongside coffee, tea, or milk.

Ingredients:

Vanilla & Chocolate Banana Muffins

 

  • 1 ¼ cups flour

  • 1 teaspoon baking powder

  • ½ teaspoon salt

  • 1 large egg

  • 1 cup mashed bananas

  • 3–4 tablespoons cream (about 30 g)

  • 1 tablespoon sifted cocoa powder

  • ¼ cup soft butter (about 60 g)

  • 3 tablespoons vegetable oil (about 20 g)

  • ¾ cup sugar

  • 1 teaspoon vanilla extract

  • ⅓ cup yogurt (about 80 g)

  • 60 g melted chocolate (prepared in a hot water bath and left to cool slightly)

Preparation Method:

  1. In a bowl, whisk together the flour, baking powder, and salt. Set aside.

  2. Melt the chocolate in a hot water bath and set aside to cool slightly.

  3. Using an electric mixer, beat the butter until it doubles in volume and becomes pale in color. Add the oil and continue mixing.

  4. Reduce the mixer speed to medium, then add the egg and vanilla, mixing until the egg is fully incorporated. Increase speed again and beat until the mixture turns creamy.

  5. Add the mashed bananas (best prepared in a food processor) and mix gently.

  6. Add the dry mixture to the wet ingredients, stirring just until combined—do not overmix. Divide the batter into two equal portions.

  7. To one half of the batter, add the sifted cocoa powder and melted chocolate. Stir until fully blended.

  8. Place each mixture into separate piping bags. Line a muffin tray with cupcake papers, and pipe both batters into each cup, side by side, without mixing them. Do not fill completely, as the batter will rise slightly while baking.

  9. Bake in a preheated oven at 180°C (350°F), using heat from the bottom only, for about 17–20 minutes. Test doneness with a wooden skewer—if it comes out clean, they are ready.

  10. Remove from the oven, let cool, arrange on serving plates, and enjoy their delicious flavor.
