Yemeni Meat Muttabaq – Recipe
Yemeni meat muttabaq is a traditional dish of Yemeni origin that later spread to Saudi Arabia. It consists of thinly rolled dough shaped into a square, filled with a savory stuffing, and folded into an envelope-like form.
This dish stands out with its neat presentation and rich flavor. The filling can be customized as desired: sweet versions can include fruit and cream, while savory options range from cheese to spiced meat.
The following recipe serves 2 to 4 people.
Dough Ingredients:

500 g flour

215 g water

1 tbsp sugar

1 tsp salt

20 g vegetable oil
Meat Filling Ingredients:

40 g vegetable oil
-
250 g ground lamb
-
1 onion, finely chopped
-
2 garlic cloves, finely minced
-
½ tsp ground cinnamon
-
½ tsp ground cloves
-
½ tsp cumin
-
1 tbsp chopped celery leaves
-
125 g hot water
-
1 chicken stock cube (Maggi)

1 tomato, diced
-
Toasted pine nuts (for garnish, optional)
Preparation Method:

In a large bowl, combine flour, salt, and sugar. Gradually add vegetable oil and water, kneading until the dough becomes soft and smooth. Cover the dough with plastic wrap and let it rest in a warm place for 30–60 minutes.

Heat vegetable oil in a skillet, add onion, garlic, and ground lamb. Cook until the mixture turns brown.

Stir in cinnamon, cloves, cumin, celery leaves, chicken stock cube, and hot water. Let the mixture simmer until the liquid is fully absorbed. Add the diced tomato and stir well.

Divide the rested dough into small balls. Let them rest for 10 minutes. Roll each ball out with a rolling pin until very thin.

Place one sheet of dough on a baking tray, add some filling in the center, fold the dough into an envelope shape, and bake at 160°C (320°F) for about 10 minutes until golden.

Repeat with the remaining dough balls and filling. Arrange the muttabaq pieces on a serving platter, garnish with toasted pine nuts and parsley leaves, and serve hot.
