Yemeni Shafout with Lahoh – Traditional Recipe
Shafout with lahoh is a traditional dish widely enjoyed across the Arabian Peninsula, especially in Yemen. It belongs to the Yemeni kitchen, which is famous for its delicious and wholesome meals.
This dish is a staple during Ramadan, valued for its high nutritional content that helps the body endure fasting and provides lasting energy. With roots tracing back to ancient times, Shafout is known for its simplicity, easy preparation, and balanced nutrition—making it a complete meal on its own.
It contains essential minerals such as iron, sodium, potassium, and calcium, which boost immunity, protect against arteriosclerosis and strokes, and support those with anemia thanks to its iron content. The calcium helps strengthen bones and prevent osteoporosis. In addition, the fiber in the dish promotes healthy digestion, easing bowel movements and preventing constipation.
Because of its ease of preparation and nutritional benefits, Yemeni households prepare it frequently, especially during Ramadan, as it is considered a staple for both suhoor (pre-dawn meal) and iftar (breaking the fast).
Ingredients for 4 servings:
For the Lahoh bread:

2 cups white flour

1 cup whole wheat flour

2 tablespoons salt

2 tablespoons yeast
-
3 ½ cups water
For the Shafout mixture:

2 cups plain yogurt
-
½ cup finely grated carrots
-
1 tablespoon dried mint
-
¼ teaspoon salt
Preparation Method:

Prepare the Lahoh:
-
Mix the white and whole wheat flour with water, salt, and yeast to form a smooth, runny batter.

Cover and leave the mixture to ferment.

Heat a lightly oiled pan. Pour the batter using a coffee pot or ladle to form a round flatbread.

Cook for about 3 minutes on one side, then flip and cook another 3 minutes until done.

Repeat until all the batter is used.

Prepare the Shafout mixture:

In a bowl, combine yogurt, grated carrots, dried mint, and salt. Mix well until smooth.

Pour the yogurt mixture into serving bowls, then place a piece of lahoh bread on top.

Serve chilled or at room temperature, letting the lahoh soak in the yogurt mixture.
