Asparagus with Creamy Chicken and Mushrooms – Recipe & Preparation

Asparagus with creamy chicken and mushrooms is a delicious dish that has become popular across the Arab world. It’s hearty, flavorful, and packed with calories that provide plenty of energy.

Ingredients (Serves 4)

Asparagus with Creamy Chicken and Mushrooms

 

  • 500 g white mushrooms, washed and sliced

  • 1 kg chicken breast fillets

  • 300 g green asparagus

  • 1 tbsp vegetable oil

  • 200 g onion, finely chopped

  • 3 cloves garlic, minced

  • 250 ml hot water

  • 2 chicken stock cubes (Maggi or similar)

  • 2 tsp dried rosemary

  • 500 ml fresh cream

  • 60 g grated Parmesan cheese


Preparation

1. Prepare the chicken rolls:
Place the sliced mushrooms in a baking dish. Lay the chicken breasts on top.

Put about 50 g of asparagus in the center of each chicken breast, then roll the chicken around the asparagus.

Heat vegetable oil in a skillet and sear the rolled chicken on all sides until nearly cooked and slightly golden. Transfer the chicken to the baking dish over the mushrooms.

2. Make the creamy sauce:
In the same skillet, sauté the onion until soft and translucent. Add the garlic, hot water, chicken stock, and rosemary. Let it simmer gently.

Stir in the cream and half of the Parmesan, allowing the sauce to thicken slowly.

3. Assemble the dish:
Pour the sauce over the chicken and mushrooms. Sprinkle the remaining Parmesan on top.

Bake in a preheated oven at 180°C (356°F) until the surface turns golden.

Let it cool slightly before serving. This dish pairs beautifully with rice or fresh bread.
