Awameh (Luqaimat) – Recipe and Preparation Method
Awameh, also known as Luqaimat, is a beloved traditional dessert across the Arab world, especially in the Levant. It is one of the easiest sweets to prepare and is cherished for its light, crispy texture and irresistible flavor.
Historically, Awameh was considered a dessert of the people, simple and affordable, which contributed to its wide popularity. It is especially enjoyed in winter, as it provides the body with warmth and energy during the cold season.
This dessert is quick to prepare—within less than an hour, a batch can be ready to serve about six people.
Ingredients (Serves 6)
For the dough:

2 cups flour

1 tablespoon cornstarch

2 ½ cups warm water

1 tablespoon sugar

1 tablespoon yeast

Vegetable oil for frying
For the syrup (Qater):

3 cups sugar

1 ½ cups water

2 teaspoons lemon juice

Rose water (optional, for flavor)
Preparation Method

Make the syrup first: In a deep saucepan, combine the sugar and water over high heat until the sugar dissolves completely. Add lemon juice and stir until well incorporated. Lower the heat and let it simmer until the syrup thickens slightly. Remove from heat, stir in rose water, and set aside to cool.

Prepare the dough: In a large bowl, combine the flour with cornstarch, sugar, yeast, and mix well. Gradually add the warm water, stirring until a soft and stretchy dough forms. Cover with a cloth and let it rest for about an hour, until bubbles appear on the surface.

Fry the Awameh: Heat vegetable oil in a deep pan over high heat. Once hot, drop small round balls of dough into the oil. Fry until they float to the surface, then stir gently until golden and crisp.

Coat with syrup: Remove the fried Awameh from the oil and immediately dip them in the cooled syrup. Allow them to soak briefly, then transfer to a strainer to remove excess syrup.

Serve: Place in serving dishes and enjoy the crunchy, golden sweetness of this traditional treat.
